Description: Although this bottle is representing “Young version” for the whole series, the grape used in this bottle are selected from the vines over 90 years. Not only high intensity aroma of Black berry and Blue Berry, also some kind of mineral notes. Not just normal alcoholic fermentation was used, also MLF which helps to make the sharp acidity become mild, with round and elegant palate. High level but smooth tannin, well-balanced fruitiness and acidity, suitable to pair with Pizza with tomato sauce, roasted lamb, or beef steak.
(雖然是在”老.中.青”系列中擔當 年青” 的角色,但當中所用的田帕尼優葡萄(Tempranillo)都是從90年樹齡的葡萄樹所採收。氣味不單只有高濃度的黑桑子和藍莓氣息等黑色果實的味道,亦帶有礦物的味道。除了一般的酒精發酵外,亦採用上乳酸發酵,使酸度變得柔和,口感則圓潤細膩。單寧度高而柔和,果味與酸度亦十分平衡,配搭蕃茄醬的意式薄餅,烤羊肉或牛扒都很合適。)
