| Description: | The grapes are entirely de stemmed and then directly sent into the vats without any manipulation for a cold maceration of several days. We do not use selected yeasts and fermentation follows naturally the maceration process. We use pigeage during the fermentation and maceration. The wine is barrelled after 12 to 15 days in the vats. The press wine as well as the « vin de goutte » are blended before being sent into the Burgundian barrels of which one third is renewed each year. Less powerful than the premier crus of Chassagne, Maladière has a deep aroma of red fruits, a supple structure with tight and velvety tanins. It is a mouth watering wine for medium length of ageing which reflects well its terroir. |
